  1. If it wasn't for this place (YT and the foodie folks in particular), I'd never know about this gem. Have made it (or something close) twice-ish and it is a truly sublime dish in simplicity vs taste results. Thanks, Sir, for your take on this beaut!

  2. Perfect eggs. Lot of butter. 👍. We do similar in Texas w/peppers but add jalapeño strips too. Serve in potato rolls or homemade flour tortillas. Pepper relish, Pico de Gallo, salsa or whatever you feel like that day.

  3. Wow… What a flashback. I was born in Upstate NY… I mean really Upstate…. Adirondacks area.
My Father took me hunting with him for the very first time when I was 8 years old. After about 4 hours into our hunt, my Dad said, time for breakfast. He pulled out this sandwich from his backpack and it was my first experience with a peppers and eggs sandwich. He gave me a bite and I was hooked. I've been eating them ever since. Boy, I miss that man.

  4. Pepper and eggs which is called a wheel. In Chicago on Taylor Street been eating this for 70 years at Ernie and Rosie's snack shop on Taylor Street and Western avenue that was the best time to live

  5. Tony from ABQ here—this would’ve been great for Lent! The only tweak I’d suggest is making it New Mexico style by throwing in some green chile.

  6. South Jersey & Philly here….. We do not use Bell Peppers as our first choice of peppers. We use Cubanelles as out first choice. Bell peppers if Cubanelles are not available. Jus Sayin'

  7. grew up in Elmwood Park ILL.50s-60s. Johnnies Italian Beef Stand on Fridays they would offer pepper&egg sandwiches, because being Catholic we couldn't eat meat on Fridays, they diced the fried green peppers, and mixed them in the eggs before frying the eggs. and after we would get Italian Ice….

  8. You missed a good play on words when you said “hit the bell”. Uh…how about “…and the bell peppers”? Speaking of which, could I make this with other color peppers? I have every color but green in the fridge and I’d really love to make this for breakfast tomorrow!!

  9. Just looking at that thumbnail gives me digestion problems. I’d be tasting those green peppers all day long.
