Full written recipe – Paneer Pepper Fry
Prep Time: 10 minutes
Cooking Time: 20–25 minutes
Serving: 3–4 people
Ingredients:
Pepper Fry Masala
BLACK PEPPERCORNS | साबुत काली मिर्च 2 TBSP
CUMIN SEEDS | जीरा 1 TSP
FENNEL SEEDS | सौंफ 1 TSP
Paneer Prep
PANEER | पनीर 300–350 GRAMS
OIL | तेल 1–2 TSP
Prep
GARLIC | लहसुन A HANDFUL
ONION | प्याज़ 3 MEDIUM SIZED
Tempering & Cooking
OIL | तेल 2 TBSP
CUMIN SEEDS | जीरा 1/4 TSP
FENNEL SEEDS | सौंफ 1/4 TSP
CURRY LEAVES | कड़ी पत्ता 15–20 NOS.
GARLIC | लहसुन 1 TBSP (CHOPPED) AS PREPARED
GARLIC | लहसुन 15 CLOVES
ONIONS | प्याज़ (FINELY CHOPPED) AS PREPARED
SALT | नमक A PINCH
GINGER GARLIC GREEN CHILLI PASTE | अदरक लहसुन हरी मिर्च पेस्ट 2 TBSP
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
GARAM MASALA | गरम मसाला 1/2 TSP
HOT WATER | गरम पानी AS REQUIRED
GREEN CHILLI | हरी मिर्च 4–5 NOS. (SLIT)
CURRY LEAVES | कड़ी पत्ता 15–20 NOS.
LEMON JUICE | नींबू का रस OF 1/2 LEMON
SALT | नमक TO TASTE
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Start by preparing the pepper fry masala. Take a pan, keep the flame low, and add black peppercorns, cumin seeds, and fennel seeds. Dry roast slowly until they turn fragrant.
Once done, transfer to a bowl and let them cool completely. Then grind into a fine powder.
Now for the paneer, cut it into thick slabs. Heat a non-stick pan, add a little oil, and once hot, place the paneer slabs in.
Cook until one side turns light golden brown, then flip and cook the other side the same way.
Once both sides are done, transfer to a board and let them cool slightly, then cut into pieces.
For the prep, take a chopper and coarsely chop the garlic. Transfer it to a bowl.
Roughly cut the onions, add them to the same chopper, and chop them finely.
Now for cooking, heat oil in a pan on high flame. Add cumin seeds, fennel seeds, curry leaves, and a little chopped garlic. Sauté briefly.
Then add the whole garlic cloves, chopped onions, and a pinch of salt. Cook on high flame, stirring continuously, until the onions turn light golden brown.
Add the ginger garlic green chilli paste and cook further. The onions will deepen slightly in colour and develop more flavour.
Now reduce the flame and add turmeric powder, garam masala, half the prepared pepper fry masala, and a splash of hot water. Mix well and cook until the masala is properly roasted and the oil starts to separate.
At this stage the masala will look slightly dry. Add a little hot water to loosen it so it can coat the paneer well.
Add the paneer pieces along with the remaining pepper fry masala, slit green chillies, curry leaves, lemon juice, and salt. Mix gently so all the paneer gets evenly coated without breaking.
Taste and adjust salt if required. Finish with fresh coriander and give it a final mix.
Our spicy, delicious Paneer Pepper Fry is ready. You can have it as a starter by itself or also enjoy it with some malabar parotta.

Chicken Dum biriyani is something I learnt from you and mastered it, who ever has tasted it has always has completed me , the credit goes to you chief Sanjot kher . I’ve been following YFL since the lockdown when I first tried your Bedmi Aloo—I haven’t ordered it from a restaurant since! Your Plum Cake has also become a staple; it’s a birthday and Christmas tradition that makes our whole house smell amazing. My mom and I have a ritual of watching every new video together. I used to say 'Veg Biryani is just greasy pulao' until your Aloo Biryani proved me wrong! Living in Bangalore, your recipe is the only Pav Bhaji I’ll eat.
