🛒 INGREDIENTS

Green Chillies: 150g (Use a mix of dark and light green for balanced heat)

Garlic Cloves: 20-25 large cloves (Peeled)

Peanuts: ½ cup (Raw or slightly roasted)

Cumin Seeds (Jeera): 1 tsp

Oil: 2 tbsp (Peanut oil works best for authenticity)

Salt: To taste

Fresh Coriander: A handful (Optional, for freshness)

Lemon Juice: 1 tsp (Optional, to balance the spice)

👩‍🍳 COOKING PROCESS

Prep the Chillies: Wash and dry the green chillies thoroughly. Remove the stems and break them into halves to prevent them from “popping” in the pan.

Sauté: Heat 1 tbsp of oil in an iron tawa or heavy pan. Add the chillies and fry until they get charred white blisters.

Aromatics: Add the garlic cloves and cumin seeds to the same pan. Sauté until the garlic softens and develops golden spots.

Crunch Factor: Throw in the peanuts and roast everything together for another 2-3 minutes until the peanuts are crunchy.

The Traditional Crush: Transfer the hot mixture into a Mortar and Pestle (Okhli/Khalbatta). Add salt and pound it while it’s still warm.

Note: Aim for a coarse, chunky texture. Avoid using a mixer grinder if possible!

Final Touch: Mix in chopped coriander and a squeeze of lemon juice if you like a bit of tang.
