Creamy White Chicken Chili Recipe!



Lola’s White Chicken Chili
INGREDIENTS:
4 cups diced chicken (or 1 rotisserie) 🍗
4 cups chicken stock 🥣
3 cans cannellini beans 🤍
1 sweet onion, chopped 🧅
1 can sweet corn 🌽
7 oz diced green chiles 🌶️
2 tbsp Lola’s Trinidad Scorpion 🔥
Juice of 1 lime 🍋‍🟩
4 tsp salt (adjust to taste) 🧂
1 tbsp olive oil 🫒
1 tbsp garlic powder 🧄
1 tbsp cumin
2 tsp smoked paprika
2 tsp onion powder
1 tsp coriander
1 tsp dried oregano
1 tsp pepper
8 oz cream cheese 🧀

INSTRUCTIONS:
Heat a large pot over medium heat. Add olive oil + onion 🧅 cook ~3 min until soft.
Add green chiles 🌶️, all spices, lime juice 🍋‍🟩, and cream cheese 🧀 stir until smooth + fully melted.
Slowly pour in chicken stock 🥣, stirring as you go.
Add chicken 🍗, beans 🤍, corn 🌽, and Lola’s Trinidad Scorpion 🔥 (adjust to taste).
Let simmer 20–30 minutes until everything comes together.

SERVE WITH:
Sour cream 🤍, cilantro 🌿, and Lola’s Hatch Chile & Sweet Corn Salsa 🌽🔥
PRO TIP:
Want it extra creamy? Blend 1 can of the cannellini beans 🤍 and stir it in. Game changer.
