Southern Chicken Chili ๐Ÿ—๐ŸŒถ๏ธ๐Ÿซ˜



Hey Scrum chums! Here’s one of the most amazing easy food recipes I’ve cooked recently โ€” this hearty smoky chicken chili takes me straight back to a chilly autumn evening at a little Tennessee roadside diner where a steaming bowl of the most incredible white and dark meat chili arrived and warmed us from the inside out before we even finished the first spoonful! ๐Ÿ˜‹

Prep Time: 15 minutes
Cook Time: 35 minutes
Serves: 6

Ingredients:
– 1ยฝ lbs boneless chicken thighs, shredded
– 2 cans (15 oz each) white northern beans, drained
– 1 can (14 oz) fire-roasted diced tomatoes
– 1 can (4 oz) diced green chiles
– 1 onion, diced
– 4 garlic cloves, minced
– 2 cups chicken broth
– 1 tsp each: cumin, smoked paprika, chili powder, oregano
– ยฝ tsp cayenne
– 2 tbsp olive oil
– Sour cream, shredded cheddar, cilantro & cornbread to serve

Steps:
1. Heat olive oil over medium heat. Sautรฉ onion 5 minutes until softened. Add garlic 1 minute.
2. Add all spices and stir 1 minute to bloom.
3. Add chicken, fire-roasted tomatoes, green chiles and chicken broth. Stir well.
4. Simmer 20 minutes until chicken is cooked through. Remove and shred then return to pot.
5. Add white beans and simmer 10 minutes until thickened.
6. Serve topped with sour cream, cheddar, fresh cilantro and cornbread alongside.

Diabetic friendly swap: skip the cornbread and serve over cauliflower rice for a lower carb option that keeps all the bold Southern flavor! ๐ŸŒถ๏ธ

Air Fryer option: cook chicken thighs at 400ยฐF for 18โ€“20 minutes before shredding into the chili base.
