What I Ate Today as a VEGAN Wheelchair Ninja || EPIC Chili Cheeze Fries

Come check out what I ate today as a 6-year ethical vegan! Of course, this is just ONE example of what I eat in a day. Please keep that in mind before drawing conclusions about my overall health and nutrient intake. While I typically eat a low-oil and high-carb diet, this is not always the case! It’s just one of the many ways to eat vegan. Do what works for YOU!

For supplements, I take a B-12 and D-3 to round out my diet even while eating plenty of B-12 fortified foods and living in a place with optimal sunshine year-round. I just like to make sure my body is getting everything that it needs to THRIVE!

Disclaimer: Full paralysis is not a prerequisite for using a wheelchair. Many wheelchair users can stand and/or walk. I am not fully paralyzed and am able to stand and walk with assistance. Over the years, my neurological issues have progressively worsened, so using a wheelchair is the most optimal way for me to live my life to the fullest.
