Ingredients
5 long / large green chillies
1 and ½ cup of besan /gram flour
1/4th cup of rice flour
1/4th tsp of ajwain
1/4th tsp of red chilli powder
1/4th tsp of turmeric powder
a pinch of hing/asafetida powder
½ tsp of baking soda
For the stuffing
1 finely chopped onion
1/4th tsp of red chilli powder
1/4th tsp of chaat masala powder
a few coriander leaves
1 tsp of lemon juice
½ tsp of salt
Take 5 green chillies and make a slit in between all of them. Then deseed all the green chillies and keep it aside.
Take a bowl and add 1 and ½ cup of besan along with 1/4th cup of rice flour, 1/4th tsp of ajwain, 1/4th tsp of red chilli powder, 1/4th tsp of turmeric powder, a pinch of hing/asafetida powder, ½ tsp of baking soda and ½ tsp of salt. Mix all of this and then add ½ a cup of water and mix it until it becomes a smooth paste. While mixing it, you can add some more water to ensure there are no lumps and it becomes a smooth paste. Then keep this bowl aside.
Take a pan and add oil to deep fry the mirchi bajji. Coat the chilly in the batter made earlier and place it in the oil. Repeat the process with the rest of the chillies. Ensure you fry both the sides evenly. Let it fry until they turn golden brown. You can then remove them from the oil and shift them to a paper towel.
For the stuffing, take 1 finely chopped onion along with 1/4th tsp of red chilli powder, 1/4th tsp of chaat masala powder, a few coriander leaves, 1 tsp of lemon juice and the salt as per taste. Mix all of this and make slits in the mirchi bajji and add the stuffing to the mirchi bajji.
