Recipe
Ingredients:
– 1 onion
– 6 cloves garlic
– 3-5 bell peppers
– 2 cans beans
– 2 cans tomatoes
– 3 tbsp tomato paste
– 2-3 dl corn (frozen or canned (drained))
– 3 tsp cumin
– 3 tsp paprika
– 1 tsp coriander
– 1 tsp oregano
– 3 tsp chili powder (mild or hot, your choice)
– 1 tsp cayenne pepper (optional)
– 1/2-1 tsp salt
– 1L water
– oil for frying
Peel and chop onions and garlic. Fry for 3 mins on medium heat. Add spices and fry for 30 sec. Add the rest of the ingredients. Bring to a boil, lower the heat and let simmer under a lid for 20 mins. Taste and make adjustments if necessary. Enjoy!
