Side note:
So I purchased all the ingredients then realized it was a crockpot recipe & I didn’t feel like busting out my crockpot so I made it on the stove.
Ingredients:
8oz raw flank steak cut into bite size pieces
2 1/2 tsp. Chili Seasoning or more to taste
1 15 oz can of red kidney beans, drained and rinsed
1 14.5 oz can crushed tomatoes
1 14.5 oz can diced tomatoes with green chilies (not drained)
1 cup chopped bell pepper
1 cup chopped onion ( we used onion seasoning instead)
Optional toppings: shredded cheese, light sour cream , chopped scallions
1. Place steak in slow cooker and sprinkle chili seasoning. Add remaining ingredients and stir to mix. (Or you can cook it like i did on the stove)
2. Cover and cook on jig for 3-4 hours or on low for 7-8 hours until steak is fully cooked and veggies have softened.
Makes 4 servings
CHOCOLATE PUMPKIN CREAM PIE RECIPE:
Ingredients:
Crust:
1 TBSP whipped butter
1/4 cup unsweetened apple sauce
6 sheets (24 crackers) chocolate graham crackers, crushed (I used H-E-B teddy grahams )
Filling:
3/4 cup canned pumpk purée
3/4 cup low fat ricotta cheese
3 packets natural no calorie sweetener (I used monk fruit sweetener)
1 tsp. Vanilla extract
1/2 tsp. Pumpkin pie spice
1/2 tsp. Cinnamon
Dash of salt
1 1/2 cups natural whipped topping
2 TBSP. Mini semisweet chocolate chips
1. Preheat the over to 350 degrees. Spray a 9” pie pan with nonstick cooking spray
2. In a large microwave safe bowl, microwave butter for 20 seconds or until melted. Add apple sauce and crushed graham crackers. Mix well until uniform.
3. Evenly distribute crust mixture along the bottom of the pie pan using your hands or a flat utensil to firmly press and for the crust. Press it into the edges and up along the sides of the pan.
4. Bake until firm, about 10 minutes. Let cool completely, about 20 minutes.
5. In a second large bowl, combine pumpkin, ricotta, sweetener, vanilla extract, pumpkin pie spice, cinnamon and salt. Mix until smooth and uniform
6. Pour filling into the crust and smooth out the top. Top with whipped topping and chocolate chips.
Makes 8 servings
