1.5 lbs. lean ground turkey
1/2 t olive oil
1 onion ( chopped)
3 cloves garlic (minced)
1 tsp chili powder
2 bay leaves
1.5 T cumin
1 t oregano
2 – 15 oz. white northern or navy beans, rinsed and drained or use two cans chili beans like I did!
15 oz. canned pumpkin puree
4.5 oz. chopped green chile
2 cups low sodium chicken broth
salt and pepper to taste
Chopped red onion or chives for topping
Greek yogurt or sour cream for topping
Heat a sauté pan and lightly spray with oil
Add meat and cook braking it up until white, about 5 minutes, Add to crock pot
Add oil to sauté pan, then onion, garlic and sauté about 4b minutes, add cumin and sauté another minute, Add to crock pot
Add beans, pumpkin puree, green chilis, broth, chili powder, oregano and bay leaves.
Cover and cook on high for 4 hours, or low 6 to 8 hours.
Remove bay leaves and adjust seasoning to taste before serving.
