some people may argue this isn’t a chili without tomato! it’s a good chili for people who have aversions to the acidity of cooked tomatoes. it also has a ton of protein.
1/2 large yellow onion or 1 small, chopped
1/2 bell pepper (i did not add this to mine, so added more spices), chopped
2-3 garlic cloves, minced
1 lb. ground beef
1 carrot, chopped
1 small zucchini chopped, or 1/2 large
1 tsp oregano
2 tsp cumin
2 Tablespoons chili powder
1 tsp ground turmeric
1 tsp sea salt * more to taste, as with all the spice
1/2 cup water
1 15 oz. can garbanzo beans, with juices
1 15 oz. can red kidney beans, with juices
*I also forgot to mention that you can most definitely add some fresh chopped herbs (cilantro or parsley)!
