DELICIOUS Vegan chili recipe 🌶

Thick, rich and healthy chili!

INGREDIENTS:

•3 tbsp olive oil
•1 onion
•2 cloves of garlic
•1 tbsp tomato paste
•1 1/2 carrots
•1/2 cup chopped celery
•1 red bell pepper
•1 can of black beans
•1 can of mixed beans
•1 can of chopped tomatoes
•500ml vegetable broth
•Salt, pepper (1-2 tsps)
•Paprika/smoked paprika 1tsp
•Chili pepper 1 tsp
•Cumin 1-2 tsps
•Thyme 1 tsp
•2 tbsps agave syrup

Sour cream:
•100g soy yogurt
•Juice of a 1/2 lemon

Toppings:
•Tortilla chips
•Avocado
•Parsley
