Thick, rich and healthy chili!
INGREDIENTS:
ā¢3 tbsp olive oil
ā¢1 onion
ā¢2 cloves of garlic
ā¢1 tbsp tomato paste
ā¢1 1/2 carrots
ā¢1/2 cup chopped celery
ā¢1 red bell pepper
ā¢1 can of black beans
ā¢1 can of mixed beans
ā¢1 can of chopped tomatoes
ā¢500ml vegetable broth
ā¢Salt, pepper (1-2 tsps)
ā¢Paprika/smoked paprika 1tsp
ā¢Chili pepper 1 tsp
ā¢Cumin 1-2 tsps
ā¢Thyme 1 tsp
ā¢2 tbsps agave syrup
Sour cream:
ā¢100g soy yogurt
ā¢Juice of a 1/2 lemon
Toppings:
ā¢Tortilla chips
ā¢Avocado
ā¢Parsley
