Note: I made this recipe X4, but this is her recipe which serves 8.
2 TB safflower oil ( I used Olive oil)
1 1/2 lbs. 85% lean ground beef
1 yellow onion diced
1 red bell pepper diced
1 jalapeno minced
3 cloves of garlic minced
S & P
3/4 cup lager-style beer ( I used Sam Adams Octoberfest)
2 TB chili powder
1 1/2 TB packed light brown sugar
2 tsp. ground cumin
1 tsp. dried oregano
2 TB tomato paste
3 cups beef broth
1 (15-ounce) can black beans rinsed and drained
1 cup tomato puree
Add oil to pot, once it’s hot add ground beef. Break up with a wooden spoon until cooked through. Add onion, bell pepper, jalapeno and garlic along with s & p. Cook approx 8 min or until softened.
Add the beer and simmer for about 30 seconds. Stir in the chili powder, brown sugar, cumin, oregano and tomato paste. Salt more to taste. Then add broth, beans and tomato puree. Bring to a boil then reduce heat and cook for about 2 hours.
