Below is the recipe:
Ingredients:
2 teaspoons olive oil
1 large or 2 small onions diced
2 poblano peppers seeded and diced (green bell peppers can be substituted)
4 oz can of mild green chilies not drained
19 oz can of white chili or cannelloni beans
1 cup corn ( optional)
3/4 pound chicken breasts diced or small chunks
3 teaspoons Chili Powder
1 1/2 teaspoons Cumin
1/2 teaspoon Oregano
2 cups Chicken Broth
3 table spoons Cilantro
2/3 cup Sour Cream
Instructions
1. Dice chicken into 1/2 cubs or small chunks
2. Add olive oil to a dutch oven. Soften onion and peppers over medium heat until translucent. Do not brown!
3. Add remaining ingredients except the sour cream. Cover and simmer 25 min.
4. Remove from heat and stir in sour cream and cilantro.
