Chili purist debates aside, I absolutely love anything that simmers for 4 hours. This three bean chili recipe will have you thinking of cold nights and warm firesides every time.
Ingredients:
1 lb ground beef
1/2 large white onion, diced
1 bell pepper, diced
3 garlic cloves, diced
3 12oz cans of beans, drained and rinsed
1 14oz can of diced tomatoes
32oz beef broth
1c beer or wine or broth
4tbsp olive oil
3tsp kosher salt
1tsp black pepper
1tsp garlic powder
1tsp onion powder
1/2tsp ground cumin
1/2tsp ground coriander
1/2tsp smoked paprika
1/4tsp chili powder
1/4 tsp cayenne pepper
1 bay leaf
meat seasoning of choice
Recipe:
Brown meat over medium high heat, season with meat seasoning, 1 1/2 tsp of the kosher salt and the pepper with half of the oil. Add diced onion, bell pepper, and garlic and saute with the rest of the oil for 5 minutes. De-glaze pot with with beer, stir and reduce liquid by half. Add beef broth, tomatoes, beans, spices, and 11/2 tsp of kosher salt. Cover with lid, bring to boil, and simmer for 3-4 hours, stirring occasionally.
