College Cookbook Episode 1 – 13 Minute Chili

Erin teaches Hunter how to make easy 13-Minute Chili.

Ingredients:
⁃ 2 Tbsp olive oil
⁃ 1 onion, diced
⁃ 1 can crushed tomatoes
⁃ 1 can tomato paste
⁃ 2 cans kidney beans, drained & rinsed
⁃ 2 Tbsp chili powder
⁃ 1 ½ tsp salt
⁃ 1 tsp black pepper
⁃ 1 tsp cumin (optional)
⁃ 1 Tbsp garlic granules (optional)
⁃ 1 Tbsp onion granules (optional)

Topping Suggestions:
⁃ Cooked ground turkey, beef, bacon, any meat
⁃ 1 red pepper, chopped (optional)
⁃ ¼ cup Worcestershire sauce (optional)
⁃ Hot sauce
⁃ Sour cream
⁃ Cheese (cheddar & mozzarella taste great with this chili)
⁃ Crushed tortilla chips

Directions:
1. In a large pot on medium heat, saute the onions and garlic in olive oil until translucent, about 3 minutes.

2. Stir in the crushed tomatoes, tomato paste, kidney beans, chili powder, salt, pepper, cumin, garlic granules, and onion granules and let everything simmer for at least 10 minutes. (The longer you let it simmer, the better it will taste, but 10 mins is really all you need). Then, finish with any desired toppings and enjoy!!
