December is one of my favorite months. It’s the last month of the year, my birthday month, holidays are being celebrated, and then there’s the start of winter. This year, meteorological winter starts on December 21st. I’m not a fan of polar vortexes, but I am a huge fan of indulging in a hearty chili and an overstuffed belly on a cold evening!
Let’s talk about Chili, and I think I told you all that this is one of my favorite meals in the winter months. Honestly, I don’t think there is ever a bad time of year for chili. It is one of those meals that we can enjoy no matter what the weather may be doing. Here in Atlanta Georgia, in the hot sun and also at the end of a nasty cold winter, we are still taking full advantage of its warm and inviting effects.

I’m starting things off with my own Chipotle Turkey Chili, I used our very own Chipotle Pepper Chili Spice to create this masterpiece. I use dried chilies like ancho’s and chipotle peppers to create the spice, which gives it a rich, deep and nuanced chili flavor. Don’t be intimidated by the idea of starting out with dried chilis – I will show you how easy it is to get all of their flavor into your pot of chili!
