THE Best White Chicken Chili Mix
I don’t always use a boxed mix, but something about Carroll Shelby’s Wghite Chicken Chili Mix spoke to me.
Brown your chicken breast in a paprika, salt, black pepper mixture in a cast iron. Sear on high for 4 minutes per side.
Set aside to rest.
Chop bell pepper (color of choice) and onion. Add tsp of salt and pepper.
Sautee with minced garlic for 8 minutes.
Chop Chicken into 1/2″ x 1/2″ pieces.
Once onion and pepper are soft, add chicken and spice packets.
Stir for 2 minutes and add 3 cups water.
Bring to a boil, then reduce heat.
Simmer for 15 min, then add canned chili beans and diced tomatoes and simmer for another 10 minutes.
Add frozen corn and cook for another 5 minutes.
Once done, spoon into bowls and add fresh jalapenos and mozzarella cheese.
I made a homemade white chicken chili a few years ago and forgot exactly what I did. This mix replicates it perfectly. Find this Mix!!
