TODAY’S RECIPE:
Erika’s Home Refresh Family Chili
INGREDIENTS:
2 pounds ground turkey
3 cans chili beans, undrained
2 28 oz cans crushed tomatoes, undrained
3 bell peppers (any colors- we like 1 green, 1 yellow, and 1 orange) (Chopped)
Any number of added spicy peppers (ex- jalapeño, Serrano, Habanero) (Chopped)
1 medium yellow onion (Chopped)
5 cloves garlic (Minced)
4 tablespoons chili powder (use less of this to reduce spice level)
2 tablespoons sugar
1 tablespoon garlic powder
2 teaspoons crushed red pepper
2 teaspoons salt
4 teaspoons dried basil
2 teaspoons dried oregano
1 teaspoon ground cayenne pepper
2 tablespoons olive oil
2 tablespoons vinegar
Around 1 cup low-sodium chicken stock (last step – add to get your desired consistency – adjust amount to preference )
COOKING PROCESS:
– In large pot, sauté onions, garlic, and peppers in olive oil over medium heat until onions are translucent
– Add ground turkey and cook until browned
– Add remaining ingredients and stir well to combine
– Reduce heat to low and simmer for 1 hour, stirring occasionally
