Singaporean chili crab:
Method:
*In a large pot heat oil over medium heat until shimmering. Stir in garlic, shallots, ginger, oyster sauce & chilies. Cook until fragrant stirring about 1minute
*Add crab pieces and 2cups of chix broth. If using chicken cubes, add chix cubes followed by 2cups of water. Cover loosely and let it boil until the crab turns red and is nearly cooked through, about 6-7 minutes
*Remove cover and stir in tomato paste and chili sauce (if desired). Simmer 1minute and season to taste with salt & sugar to taste. Stir in cornstarch and bring to boil to thicken.
*Add the egg and sprinkle with green onions
*Serve with steam white rice
