Crockpot White Chicken Chili Recipe
Ingredients
1 lb boneless skinless chicken breasts
1 diced yellow onion
2 cloves of garlic (minced)
24 oz chicken broth
2 15 oz cans of Northern Beans- drained and rinsed or Bush’s White Chili Beans
2 4 oz cans of diced green chiles
1 15 oz can of whole kernel corn
1 tsp salt (however, you can season to taste)
½ tsp pepper (however, you can season to taste)
1 tsp cumin
Âľ tsp oregano
½ tsp chili powder
ÂĽ tsp cayenne pepper (optional)
Small handful of chopped cilantro
6 oz of softened cream cheese
ÂĽ cup half and half
Cooking Instructions:
Spray crockpot with non-stick cooking spray
Place cleaned and trimmed chicken breast to bottom of crockpot
Add all of the seasonings, corn, chiles, onions, cilantro, chicken broth, garlic and beans to the crockpot
Cook on LOW for 8 hours or HIGH for 3-4 hours (make sure chicken is completely cooked)
Stir in half and half and softened cream cheese and cook for an additional 15 minutes
Let sit for 10-15 minutes and serve in bowl and top with your favorite toppings. I chose shredded cheese and tortilla strips.
