Winter night Chili

Good evening from the Auburn Hill Homestead. It is a perfect night for a warm bowl of stick to your ribs chili!

Winter night Chili ingredients:
1/2 lb Bacon
1/2 C. Bell Pepper
1/2 C. (ish) Onion
1 lb ground Beef, Bison, or Venison
1 can Refried Beans
1 can dark or light Kidney Beans
8 oz Tomato Sauce
1 C. water
3 TBS. Chili Powder
1/2 tsp (or more if your like our family) Garlic Powder
1 TBS Molasses
Salt and Black Pepper to taste
*Optional 1/2 tsp (or to taste) Cayenne Pepper

Brown the bacon on med high heat in a Dutch oven or non-stick stock pot. Once browned, remove the bacon, but leave the bacon drippings in pan.

Saute onion and pepper on medium low heat in the bacon drippings. Add in 1 lb of ground meat and cook til brown.

Stir in refried beans, kidney beans, tomato sauce, and water.

Add in chili powder, garlic powder, salt, pepper, cayenne pepper, and molasses. Stir well and simmer over very low heat for about an hour. If simmering longer or transferring to a crockpot, add in about 1/2 C more water.
