Healthy Turkey Chili

When I decide to be on good behavior and eat healthy this recipe is my go-to meal. Very healthy packed with protein, fiber and lots of flavor!!! You can use only ground turkey, but I find that adding chicken gives it more flavor. Prep time about 30 minutes. Cook time an hour and 30 minutes.

Ingredients :
2 tbsps olive oil to brown the meat
1 lb ground chicken breast
1 lb ground turkey
1 cup chopped onion
1 leek diced
4-5 cloves of garlic minced
2 heaping tbsp chili powder
1 tbsp ground black pepper
1 tsp crushed chili flakes
1 tbsp salt
1 or 2 cups chopped kale
2 zucchini cubed
1 small can of mild diced green chiles (about 5 oz)
1 (15oz) can black beans (rinsed thoroughly)
1 (15oz) can white beans (whatever kind you like) rinsed
4 or 5 tbsp chopped cilantro
1 tsp cumin powder
1 (32oz) container red pepper and tomato soup
1 cup tomato sauce

Bake for an hour at 350 F

Garnish with chopped cilantro and whatever cheese you like. I used shredded mozzarella, because I like the texture when it melts. For even healthier version I eat it on top of baby greens garnished with a little olive oil.
