Jack attempts to make chili 100% from scratch. Fresh stewed tomatoes, raw beans and more. Watch and see how he does it.
Here is the recipe:
smoked paprika
1 1/2 lbs smoked ground pork
1lb Thick cut bacon chopped
roasted red/green/yellow/orange bell pepper diced
2 large onion sweet diced
3 cloves of garlic diced
2 tablespoons of chili powder
1 teaspoon of dried mustard
2 tablespoons of cumin
3 teaspoons kosher or Himalayan Pink Salt
3 teaspoons black pepper
5 hatch chilis roasted and chopped
4 poblano peppers
2/3 lb kidney beans or three 15oz cans
2/3 lb pinto beans or three 15oz cans
2-4 cups water
2 large jar of crushed tomatoes or large cans from store if not fresh
— cook your beans in water. About 1 to 1 1/2 hours on low simmer. Then drain
— blanche your tomatoes and peel them and chop them. You will need about 12 medium/large tomatoes
— cook your bacon and chop it up
— brown the ground pork
— put peppers/chilies on foiled cookies sheet and oil them well. roast peppers/chilies until charred on the outside. turn often.
— take peppers/chilies from oven and put in covered container for 15-20 min to sweat off skin. Then peel off skin and chop.
— Ad all ingredients into the crockpot including water from crushed tomatoes.
— add all the seasoning and mix well
–cook on slow for 5 hours
— Top with Shredded Cheese, sour cream, onions, etc.
— Cooking Tip: remember that these ingredients can be swapped out for other ingredients that you like more. Also, increase the seasoning as needed for your taste.
