Filipino Family 1st time Eating Chili | Cooking Chili with The Armstrong Family. Making my award winning Chili for everyone to see there reaction. Chili is one of those things that takes a lot of time to make right. It’s not just cook and serve. It’s a matter of bringing all the Ingredients together and letting the flavors absorb into the beans and allowing the textures to come alive. When done right its a bit of magic in the mouth!! Pairs well with cinnamon rolls, cornbread or just crackers. Can use leftovers for chili cheese fries, or chili cheese dogs. Or sprinkle cheddar cheese on top with side of crackers and serve !!! Enjoy!

Serves 8 for this Chili recipe
2 cups red beans
2 cups white beans
2 cups kidney beans
* Important * if using raw beans must soak for no less than 8 hours. Boil for no less than 10 minutes. Remember. Beans are poisonous if not prepared correctly!! After soaking rinse thoroughly and add fresh water!
Once beans are boiled add

6 CUPS Tomato sauce
1 cup tomatoe paste
1 packet chili seasoning
1/4 Tbsp chili powder
*Secret ingredient! 1 packet Taco seasoning
1 Tbsp Curry powder
1 Tbsp Paprika

10 small ripe tomatoes peeled and stewed.
– To stew tomatoes boil till skin cracks and than boil for additional 2 minutes. Immediately remove and dip in ice water. Cut into quarter size peices.
Return tomatoes to sauce pan and add ingredients below. STEW for 10 minutes on medium high heat.
1/2 Tbsp marjoram
1/2 Tbsp Italian seasoning
1/2 Tbsp cilantro
1 Tbsp salt
3 Tbsp oil
1 Tbsp Pepper

Add tomatoes to beans after stewed!

Meat!!!!! Can use beef, pork or chicken. I used beef and pork.

1 kilo meat
6 small red onions chopped fine
1 whole garlic diced
Brown in skillet.
– don’t drain!!
Secret ingredients!!
Add 1/4 cup worchestire sauce
6 Tbsp liquid Smoke.
Cook for additional 10 minutes.

Add meat mixture to beans and stir.

Continue to cook very low heat for 4 hours. Scraping bottom only so it doesn’t burn or stick.
Let chili rest another 4 hours no heat!!
Cook additional 4 hours and serve!!!
