Sichuan Spicy Wonton in Chili Oil | Chinese Recipe | wa's Kitchen

When I lived in Hong Kong we would enjoy spicy wontons at the restaurant quite a lot. Now that I am in Europe I use this recipe to make them from home. Please try and feel free to adjust the mix of rayu and chili oil according to your taste. And it’s not so spicy that kids cannot enjoy either…

Ingredients (for 5 people) :
– 500g ground pork
– 40g scallion
– 30g fresh ginger
– 1 garlic clove
– 1/4 tsp fine salt
– 2 tbsp shaohsing rice wine
– 1/2 tsp soy sauce
– 2 tsp oyster sauce
– 1/2 tsp sugar

For the dipping sauce :
– 2.5 tbsp gold plum chinkiang vinegar
– 2 tbsp chinese light soy sauce chinese light soy sauce or standard japanese soy sauce
– 1 garlic clove
– 1 tsp ra-yu
– 1 tsp sesame oil
– 1 tbsp chili oil
– 3 tsp sugar
– 1 tsp spicy chili crisp
– 1/2 tsp dark soy sauce (optional)
