Easy, Cheap, Healthy Recipes: White Bean Chili

Here is the recipe:
Ingredients:
1 small yellow bell pepper
½ small red onion
4 cloves of garlic
2-3 TBSP olive oil
Salt, pepper, cayenne to taste
1 small can of diced green chilies
2 cans of white beans (approx 32 oz)
Chopped cilantro (to taste, option)
Optional items: cheese, chips, yogurt

Instructions:
1. Finely chop bell pepper and onion, mince garlic
2. In medium to large pot, heat the oil over medium/high heat, cook onion and bell pepper until beginning to soften (2-3). Season with salt, pepper and a little cayenne.
3. Add garlic and cook another minute and add diced green chilies.
4. Turn down heat to medium low, add stock and 1 can of (drained) beans. Cover and cook for 5-6 minutes
5. Use immersion blender (or regular blender in batches, follow hot liquid recommendations for your blender) to blend soup together to texture you prefer.
6. Stir in remaining beans, cilantro and (optional) cheese/yogurt. Cook until combined and warm.
7. Serve with more cilantro, cheese and chips as desired.
