EASY GREEN CHILE ENCHILADA RECIPE
Serves 1

INGREDIENTS:
2 Corn tortillas
1/2 cup (60g) Monterey Jack Cheese
1/4 cup (60 ml) fresh baby spinach
1/4 cup (60 ml) cooked chicken
1/2 cup (120ml) Green Chile Enchilada Sauce
Fresh Cilantro to taste

METHOD:
Warm tortillas in a skillet to make them pliable. Add cheese, spinach and cooked chicken. Roll them up and place them in an oven-safe casserole.

Pour enchilada sauce over the top making sure you are covering the tortillas. Add more cheese on top.

Bake at 375F (175F) for 20 minutes. Garnish with fresh cilantro.
