Easy bacon chorizo Chili con carne recipe

Ingredients

– [ ] Two tbsp oil
– [ ] Bacon bits 500g
– [ ] 1 onion
– [ ] Red bell pepper 1
– [ ] Two tbsp garlic
– [ ] Beef mince 1Kg
– [ ] Tomato paste 70g
– [ ] Worcestershire sauce 6 tbsp
– [ ] 2 cans of diced tomatoes 400g each
– [ ] 1 can of Red kidney beans 400g
– [ ] 2 beef stock cubes
– [ ] 2tbsp Chili powder
– [ ] 2tbsp ground Coriander
– [ ] 2tbsp smoked paprika
– [ ] 2tbsp Oregano
– [ ] 2tbsp Cumin seeds
– [ ] Salt to taste
– [ ] Chorizo coins 100g
– [ ] (Optional)A pinch of sugar to balance/cut the acidity of tomatoes

Instructions

1: Over a medium high heat add two tbsp of oil

2: Add the bacon bits and onion ,Red bell pepper ,garlic and fry until browned

3: Add mince and fry for a further few min

4: Add tomato paste,Worcestershire sauce ,chopped tomatoes

5: Add Red kidney beans, beef stock cubes and spices and bring to boil

6: Reduced heat to simmer and cover to cook .

7: Serve topped with coriander, lemon/lime, cheese and sour cream.
