How to Make Turkey Chili
Ingredients:
½ kg lean turkey, minced
3 tbsp olive oil
2 fresh tomatoes
1 cup black beans, cooked
½ onion
½ red pepper
3 garlic cloves
1 ½ cups or 1 cob of corn, boiled
1 ¼ cup chicken broth
1 tsp black pepper
1 tsp cumin powder
1 tsp oregano
½ tsp salt or to taste
1 tsp paprika
Making turkey chili:
1. Prepping the veggies:
In a saucepan, bring water to boil and add in tomatoes. Allow tomatoes to boil for 6 to 7 minutes till their skins peel off easily. Allow it to cool. Meanwhile finely chop onions, garlic, and red pepper. Once tomatoes are cooled chop them roughly into chunks.
2. Preparing the chili
Heat oil in a skillet, add turkey, onion, and garlic, and mix. Cook the turkey on low-medium heat till it loses its pink color and begins to wilt. Season with paprika, oregano, pepper, salt, and cumin. Combine it well together and cook for 30 seconds. Add chicken broth, corn, and red pepper. Mix well, cover, and simmer for 25 to 30 minutes. Add tomatoes and black beans, mix and simmer on medium-high heat for 6 to 8 minutes till the chili thickens. Check for seasoning and add more salt if required. Top off with avocado, sliced jalapenos, a dollop of sour cream, cilantro, and serve hot!
