Chilli Parotta Recipe:
Parotta (diced) – 2 nos
Oil – 3 tbsp + 1 tbsp
Garlic (finely chopped) – 1 tbsp
Ginger (finely chopped) – 1 tbsp
Green Chilli (sliced) – 2 nos
Curry Leaves – 20 nos
Onion (finely chopped) – ½ Cup
Kashmiri Red Chilli Powder – ½ tsp
Coriander Powder – ¼ tsp
Garam Masala Powder – ¼ tsp
Salt – ½ tsp
Tomato (chopped) – ½ Cup
Onion (diced) – ½ Cup
Capsicum (diced) – ½ Cup
Tomato Ketchup – 1 tbsp
Red Chilli Sauce – 1 tbsp
Fennel Powder – ¼ tsp
Coriander Leaves (finely chopped) – 3 tbsp
Cooking Instructions:
1. Heat oil and fry the parotta until it starts to get crisp. Remove it from the pan.
2. In the same pan, add the ginger, garlic, green chilli and curry leaves. Add the onion and saute until it turns translucent.
3. Add the Kashmiri chilli powder, coriander powder, garam masala, salt and tomatoes. Saute for 1 minute or until the raw smell of the spices disappears.
4. Add the diced onion and capsicum. Toss on high flame for 1 minute.
5. Add the tomato ketchup and red chilli sauce. Mix well.
6. Add the fried parotta and saute for 1 minute. Finish with fennel powder and coriander leaves.
