CHILLI CHICKEN
This will the best recipe if you use Tender chicken breast or any boneless small pieces.
Cut the breast pieces like thin shreds or slices for the even cooking and also good absorption of the spices & crispness.
Marinate the following & keep for atleast half an hour:
chicken breast – 500 gms
Salt- 3/4 tsp
ginger garlic paste- 1 1/2 tsp
Soya Sauce- 2 tsp
1 egg
crushed pepper – 3/4 tbsp
After marinating for atleast 1/2 hr….add…
Plain flour/ Maida- 1 1/2 tbsp
Corn four- 3 tbsp
Fry in cooking oil on both sides till crisp & red.
In a wok. Add Olive oil or cooking oil
Keep on high flame until we start adding the sauces.
Garlic finely chopped- 8 – 10
ginger finely chopped- 1 inch
Green chillies cut lengthwise- 4 – 5
fry 1 min.
Add Onion – 2 small. cubed & layers seperated
capsicum diced – 1 1/2
Can add assorted red & yellow capsicum also
fry for 1 min on high heat and reduce it to low to medium. Then add
chilli Ketchup- 2 tbsp
chilli sauce – 1 tbsp
Tomato š
ketchup- 1 tbsp
Soya Sauce – 1 tbsp
You can add a tsp sugar here if you like.
In a bowl add Maida – 1 tbsp
Water- 1/2 cup. mix well and make a slurry.
Add it to the wok.
Add another cup of water . Adjust salt.
Add the fried chicken.
Mix well for 20 sec . Garnish with green onions.
Goes well with Chinese fried rice.
