Recipe:
Ingredients
– Cauliflower (boiled) – 1 large
For the batter
– All purpose flour – 1 Cup
– Corn flour – 1 Cup
– Salt – 1/2 tsp
– Chilli powder – 1 tsp
– OIl for frying
For the sauce
– OIl – 1 tbsp
– Ginger (chopped) – 1 tsp
– Garlic (chopped) – 1 tsp
– Green chilli (chopped) – 2
– Onion (cubed) – 1
– Capsicum (cut in large pieces) – 1
– Vinegar – 1 tsp
– Soy sauce – 2 tsp
– Chilli sauce – 3 tsp
– Tomato ketchup – 2 tsp
– Salt to taste
– Sugar – 1/2 tsp
– Water – 1/4 cup
For the slurry
– Corn flour – 1 tsp
– Water – 2 tbsp
Method
– In a bowl, combine all purpose flour, corn flour, salt and chilli powder and make into a thick batter using water
– Add the cauliflower florets to the batter and coat it well using your hands
– Deep fry the florets over medium heat until they are golden brown
– Heat 1 tbsp oil in a pan
– Add ginger, garlic, green chillies, and onions, capsicum and saute on high heat for a minute
– Now, add salt, vinegar, soy sauce, chilli sauce, and tomato ketchup and cook for 1 minute
– Next add 1/4 cup water to the sauce
– In a small bowl, combine corn flour and water into a slurry and add it to the sauce and wait for it to thicken
– Once the sauce thickens, add the fried cauliflower florets, turn off the heat, and coat it well
– Delicious chilli gobi is ready to serve
