I personally look for a few points for a chilly Pork to be a great chilly Pork.
Firstly, it should be lean meat. I do not like eating pork fat. May be a 70:30 lean meat to fat ration is okay.
Secondly, I prefer meat and chilly and an overdose of some sauce. Chilli Pork for me is a dry Chilli pork. I prefer to have those lovely slices with chilly dry-styled with rice.
Dry Chilli pork can go with almost anything, be it some steamed rice, Hakka or gravy noodles or just like that.
Ingredients:
Pork belly (less fat & no bone) – 800 gms
Ginger – 1 inch
Garlic cloves – 12 cloves
Star anis – 3 nos
Green chillies – 10 pcs
Salt – to taste
Onions – 3 medium
Tomatoes – 2 medium
Mixed bell pepper – 100 gms
Spring Onion – 50 gms
Refined oil – 5-6 tbsp
Dark soy sauce – 2 tbsp
Sugar – 1 tsp
Ajino moto – .5 tsp
Black pepper – 1 tsp
