Easy Chicken Chili
Olive Oil
2 lbs Ground Chicken
1 Medium Onion – chopped
3 – 4 Cloves Garlic – minced
1 Tbsp Oregano
1/2 tsp Hot Chili Powder
2 Tbsp Chili Powder
1/4 tsp Cayenne
1/2 tsp Coriander
3 tsp Cumin
Salt & Pepper to taste
1 15 oz Can Kidney Beans – drained
1 15 oz Can Fire Roasted Diced Tomatoes
2 15 oz Cans Tomato Sauce
*Garnish with Cheddar Cheese, Sour Cream and Scallions
In a large pot add a drizzle of olive oil and heat over medium – high heat, add ground chicken browning until no longer pink. Stir in onions & garlic. Season with salt & pepper. Add in the spices, oregano, coriander, cayenne, cumin, hot chili powder, chili powder. Stir until well combined. Add in the fire roasted tomatoes & kidney beans, mix well. Add in the tomato sauce, rinse the cans with some water approx 1/2 cup. Cover and simmer 30 – 40 minutes stirring occasionally.
Serve topped with cheddar cheese, sour cream & scallions.
