Itās super easy to make as crockpot chili or slow cooker chili, and this can also come together quickly in a big pot on the stovetop. Read below for directions on how to make this as a crockpot chili recipe in 4 to 6 or 7 hours, or in under an hour on the stove.
White Bean Chicken Chili Recipe Ingredients
1.5 lbs boneless skinless chicken breasts
2 cans (15 oz) white northern beans, drained and rinsed
1 can (15 oz) cream corn
2 cans (4 oz each) diced green chilies, drained
3 cups chicken stock
1 small yellow onion, chopped
2 cloves garlic, minced
1 package (8 oz) cream cheese, softened
½ cup frozen corn
1 tablespoon ground chili powder
1 tablespoon ground cumin
¾ tsp ground oregano
¾ tsp smoked paprika
½ tsp cayenne pepper
½ tsp black pepper
1 teaspoon salt

White Bean Chicken Chili Recipe Directions
Chop a small onion and mince 2 garlic cloves. Measure all of the spices and mix together.
Add the onions and garlic to the crockpot. Pour in the chicken stock, add the spices and stir to combine. Add the drained and rinsed beans, cream corn, drained green chilies to the crockpot and stir.
Add the chicken breasts, making sure there is enough liquid to cover. If you like thick chili, try using 2 ½ cups of chicken stock, just make sure the chicken is covered with liquid before beginning to cook.
Cover the crockpot or slow cooker and cook on high for about 4 hours, until the chicken is tender and easy to shred. This white chicken chili recipe can also be made in a slow cooker set on low, cooking for about 6 – 7 hours.
Remove the chicken from the crockpot and shred it in a separate bowl using two forks. Now, we’re going to add the softened cream cheese to make our creamy white chicken chili even creamier. First, cut the cream cheese into cubes and add to the chili, stirring to incorporate. The cream cheese will begin to melt, and to help any last bits dissolve, use a whisk and gently whisk the mixture until itās smooth and creamy. Add the shredded chicken back into the chili, along with about ½ cup of frozen corn, more if you like. Heat on high for about 15 minutes with the cover off, heating the corn through and thickening the chili!

To make this creamy white chicken chili in a dutch oven or large pot, follow the instructions for combining the ingredients, using your favorite heavy bottomed dutch oven or large pot instead of a slow cooker. Bring the mixture to a boil, then simmer for about one hour. Continue with the instructions to shred the chicken and add the cream cheese and corn. Looking to save time?
