Spicy Chili Garlic Noodles | Hot Garlic Noodles recipe | Vegan Chili Garlic Noodles | Spicy noodles | Chili Oil

Chili garlic noodles ingredients:
To make chili oil
• 1/2 cup oil (any cooking oil that does not have a strong aroma).
• 4 red chilies (Byadagi) (To substitute – use any dried red chilies you have or use red pepper flakes)
• 1 bay leaf
• 1-star anise
• 4 cloves
• 1 tbsp Kashmiri red chili powder (substitute it with paprika)
To make spicy noodles
• 3 tsp chili oil
• 6 garlic cloves (finely chopped)
• 1 tsp red pepper flakes
• 1 tbsp Soy Sauce
• 2 tbsp finely chopped cilantro (coriander leaves)

Step by step instructions to make chili garlic noodles
1. Prepare chili oil – Heat oil in a pan over low heat. Add red chilies, bay leaf, star anise, and cloves.
2. Stir and fry it on low heat until the chilies are crisp and you get a beautiful aroma.
3. Be careful not to burn the spices. Do not increase the heat at any stage of cooking.
4. Once you start to get a nice aroma from the spices, remove from heat.
5. Add Kashmiri red chili powder and stir.
6. Let it cool down completely. Transfer it to a jar. Homemade chili oil is ready.
7. You can store this chili oil in an airtight container. Stays good for a week at room temperature. Or store it in the refrigerator for longer shelf life.
8. Cook noodles in salted water as per the instructions given on the package. Reserve 1 cup of salted water. Drain and rinse the noodles with cold water. Set it aside.

Making spicy garlic noodles
1. Heat 3 tsp of chili oil over low-medium heat.
2. Add garlic and red pepper flakes. Cook it for a minute.
3. Add soy sauce and 1/4 cup of reserved pasta water.
4. Let it come to a boil.
5. Add cooked pasta and combine.
6. If needed add more pasta water. Cook for 2 minutes.
7. Finally, add coriander leaves (Cilantro).
8. Chili Garlic noodles are ready to serve.
9. Top it with grated Parmesan cheese (optional) and serve.

Cooking tips:
Make chili oil at low heat. Do not increase the heat while making it. Be careful not to burn the spices.
In this recipe, adjust spices as per taste.
