Chilli Oil Hand Pulled Noodles Recipe: :

Chilli Oil:

Sunflower Oil (Hot) – 1 Cup
Red Chilli Flakes/ Kashmiri Dry Red Chilli – ¼ Cup
Sesame Seeds – 1 tbsp
Bay Leaf – 1 no.
Cinnamon – 1 Inch
Star Anise – 1 no.
Garlic (finely chopped) – 2 tbsp

Hand Pulled Noodles:

Maida – 2 Cups
Salt – ½ tsp
Water – ¾ Cup
Oil – 4-5 tbsp

Preparation:

Sesame Oil – 3 tbsp
Bok Choy (leaves) – 1 no.
Mushroom (sliced) – 100 gms
Spring Onion (batons) – ½ Cup
Salt – ¾ tsp
Soy Sauce – ½ tbsp
MSG (Optional) – A Pinch
Brown Sugar – 1 tsp

Garnish:

Spring Onion
Sesame Seeds

Cooking Instructions:

1. Heat oil in a pan, add the remaining ingredients in a bowl and pour over the hot oil. Allow it to cool and store airtight.
2. For the hand pulled noodles: knead a rough dough with salt and water and rest covered for 10 mins.
3. Re-knead the dough until completely smooth and soft, rest again for 10 mins.
4. Divide the dough into 2-3 portions and flatten them.
5. Coat the flattened pieces thoroughly with oil. Layer them one on top of another and rest covered further for 1.5 hours, minimum.
6. You can make thin or thick noodles, as per preference. It will depend on how you cut the dough. Cut thin strips, pull and bounce, fold and repeat for thin noodles. For thicker noodles, cut into wide strips and repeat the process.
7. The cooking time will be fairly short, 1 mins to 2 mins depending on the thickness. Add each strip as ready into boiling water.
8. Drain the noodles, coat with oil and set aside for serving.
9. For the preparation: heat sesame oil in a pan and add veggies of choice. Saute briefly for 1-2 mins. Add the noodles and season with salt, sugar and soya sauce. Add MSG optionally.
10. Spoon over the chilli oil and coat thoroughly by tossing quickly and gently. Finish with spring onion.
11. Serve in a bowl garnished with spring onions, sprinkle over some sesame seeds.
