Hey guys! Welcome back to another cozy fall recipe video! Today, we will be sharing Angieās amazing turkey chili recipe! GUYS, I LOVE CHILI AND THIS IS PROBABLY MY FAVORITE CHILI OF ALL TIME, and yes, Iāve had Skyline Chili before. I would normally never substitute beef for turkey, but this dish actually is better with turkey. Itās perfect for the chilly fall weather, and can you believe that itās only ~400 calories per serving?! Itās both satisfying and filling, and I give my approval for this dish! Ingredients (yields 6-8 servings)
2 tsp olive oil
1 large onion, chopped
3 garlic cloves, minced
1 pound lean ground turkey
4 Tbsp chili powder
2 tsp ground cumin
1 tsp dried oregano
¼ tsp cayenne pepper
½ tsp salt, or to taste
½ tsp black pepper
1lb of crushed tomatoes
2 cups vegetable stock
1 can black bean, drained
1 can red kidney bean, drained
1 can sweet corn, drained
Cheddar cheese, optional for toppings
1 jalapeƱo, optional for toppings
Sour cream, optional for toppings
Parsley, finely chopped for garnish, optional for toppings
Cilantro, finely chopped for garnish, optional for toppings
Directions:
1. Mince 3 garlic cloves and chop up 1 large onion (save some of this for your toppings).
2. In a large pot, add 2 tsp of olive oil and add in your ground turkey, garlic, and onion. Stir this around until the turkey is just cooked.
3. Add in 2 tsp ground cumin, 1 tsp dried oregano, ¼ tsp cayenne pepper, ½ tsp salt, and ½ tsp black pepper. Mix until well combined.
4. Add in 1 lb. of crushed tomatoes, 2 cups vegetable stock , 1 can black bean (drained), 1 can red kidney bean (drained), 1 can sweet corn (drained) to the pot. Mix well and let it simmer for 30 minutes-1 hr, stirring well between cook time.
5. Serve in a bowl with toppings of your choice!
