Perfect, Simple & Delicious Chili Recipe
– for a chilly day!
1 Tbsp olive oil
1 cup onion, chopped
1 Cinnamon stick – optional
2 bay leaves- optional
3-4 tsp minced garlic
1 pound ground beef
1 (14.5oz) diced roasted tomatoes, undrained
1 (8oz) tomato sauce
1/4 cup sliced peperoncini with juice – optional but so good with it!
1 (15.5oz) red kidney beans, drained and rinsed
1 (15.5oz) pinto beans, drained and rinsed
1 (15.5oz) black beans, drained and rinsed
1 cup water (or less if you want your chili thicker)
1 Tbsp chili powder
1 tsp ground cumin
1/4 tsp black pepper
1/2 tsp salt
Chili Toppings:
Peperoncini (whole or sliced)
Avocado
Shredded cheese
Crushed tortilla chips
Corn bread
Sour cream
Green onions or chives
Cilantro
Lime wedges
Instructions:
1. In a large Dutch oven or pot over medium heat, cook onions in the oil until soft, about 3 minutes. Also add the cinnamon stick and bay leaves if using.
2. Add in garlic and cook for about 1 minute.
3. Add in ground beef to the pot and brown. (Drain if there’s too much fat)
4. Add diced tomatoes, tomato sauce, peproncini, and beans, stir to combine.
5. Stir in the remaining ingredients, and bring to a boil. Cover, reduce heat and simmer 45-50.
6. Top with your favorite toppings.
I always set out a collection of toppings for my husband and I. My #1 favorite has to be Peperoncini. I just can’t have chili with out it. Feel free to leave a comment and tell me what YOUR favorite topping is!
