Pumpkin Chili Recipe Video

Pumpkin Chili
Serves: 5 (1 cup servings)
Total Time: 30 minutes

Ingredients
2 teaspoons olive oil
1 small yellow onion, chopped
1 green bell pepper, cored, chopped
2 jalapeno peppers, optional
2 garlic cloves, minced or ½ teaspoon garlic powder
1 can (14.5 oz.) diced tomatoes, with juice
1 can (15 oz.) pumpkin puree
1 cup water
1 teaspoon cumin, ground
1 can (15.5 oz.) kidney beans, rinsed
Salt and pepper to taste

Directions:
1. Heat oil in a large pot over medium high heat.
2. Add onion, bell pepper, jalapenos (if using) and garlic, stirring frequently until tender, about 5 minutes.
3. Add tomatoes, water, pumpkin, cumin, salt and pepper and bring to a boil.
4. Reduce heat to medium low then add beans.
5. Cover and simmer, stirring occasionally, for 30 minutes.
6. Serve and top with your favorite garnish.
