Butternut Squash and Turkey Chili

Kristi visits with LaToya Drake, Barren County Family & Consumer Sciences Extension Agent to demonstrate a delicious fall recipe: Butternut Squash Chili.
We’re making the Plate It Up Kentucky Proud ā€˜Butternut Squash and Turkey Chili’ recipe. This recipe features in-season and locally available winter squash. Winter squashes get their name not because of when they grow, but their ability to be stored for an extended length of time through the winter. The tough think skin of winter squash allows the produce to be kept in a cool and dry place for 3 months or more! Winter squash including butternut is a good source of vitamin A precursors like beta-carotene. Its’ tough skin also makes for extra effort in getting to the flesh; a vegetable peeler can help remove the outer shell. A sharp knife is essential to cutting winter squash; they can be easily cooked in the oven by cutting lengthwise, removing the seeds, drizzling with olive oil, and placing the squash cut side down.
