TO MAKE GINGER CARDAMOM TEA

METHOD:
1. Boil water in a saucepan.
2. Add pound ginger and cardamom to it. Boil for a minutes.
3. Add tea powder according to your preference. Let it boil for 2 minutes.
4. Add the milk and let it come to a boil.
5. Add sugar and mix well.
6. Strain and serve the chai hot.

Onion Bonda
Ingredients

Onion – 4 Nos Sliced
Green Chili – 1 No. Finely Chopped
Curry Leaves
Coriander Leaves
Salt – 1 1/2 Tsp
Chili Powder – 1 Tsp
Ginger Garlic Paste – 1 Tsp
Gram Flour – 1 Cup
Rice Flour – 3/4 Cup
Hot Oil – 2 Tbsp
Water
Baking Soda – 1/4 Tsp Optional
Oil for Deep Frying

Method:
In a bowl, add sliced onions, ginger garlic paste, curry leaves, green chilies, coriander leaves, red chili powder, salt, gram flour, rice flour, and mix well
Add hot oil and mix well
Add water gradually and make a thick bonda mixture
Finally, add baking soda and mix well
Heat some oil for deep frying, take a small amount of the bonda mixture and slowly drop it into the hot oil
Deep fry them on low flame till they are evenly cooked and brown on all sides
Serve the Onion Bondas hot with coconut chutney.

Bajji
Ingredients

Gram Flour – 2 Cup
Rice Flour – 1/4 Cup
Kashmiri Chili Powder – 3 Tsp
Salt – 1 Tsp
Asafoetida Powder – 1/4 Tsp
Water
Oil For Deep Frying
Plantain
Banana Pepper (Bajji Chilli)

Method
Peel and cut the plantain into thin slices
Slit the banana pepper
In a bowl, add gram flour, rice flour, kashmiri chilli powder, salt, asafoetida powder and mix well
Add water gradually and mix well
Heat some oil for deep frying
Dip the plantain slices in the batter and drop it gentlyu into the hot oil
Dip the slit banana pepper into the batter and gently drop it into the hot oil
Deep fry the bajjis till they are golden brown on both sides
Serve the bajjis hot with some coconut chutney by the side

Vanilla Essence – 1 Tsp (Buy:

Almond Slice (Optional)

Method:
1. Take 4 eggs and separate the yolk and the whites. Keep them aside.
2. Seive maida, baking powder, baking soda, salt into a bowl.
3. To a separate bowl, add powdered sugar and ghee. Beat the sugar and ghee until creamy texture.
4. To this add vanilla essence and mix it.
5. Now add one yolk at a time and incorporate it slowly.
6. To this add the flour mixture slowly.
7. To another bowl, add the egg whites, add sugar and beat it until it gives soft peaks.
8. Add the whisked egg whites litte by little and fold the batter. Do not overmix this.
9. Once all the all the egg whites are mix it, transfer it to a lined cake tin.
10. Preheat the oven at 180C for 15 mins.
11. Sprinkle some sliced almonds. Place the cake tin in the oven.
12. Bake the cake at 180C for 1 hour.
13. Remove the cake and let it cool.
14. Carefully remove the butter paper.
15. Delicious ghee cake is ready.
