[EN] Recipe CHILI CON CARNE – a spicy stew containing chili peppers, beef, tomatoes and kidnye beans

Chili con carne is a spicy dish made from meat and chili peppers. It is not included in Mexican cuisine, but in Tex-Mex cuisine. But the influence of Mexican cuisine is undisputed, in which several types of chili peppers are often combined to vary the taste.

The only common ingredients in all chilli recipes are meat (ground beef or diced meat) and chili peppers (jalapeño, ancho, pasilla or habanero). The oregano and cumin spices typical of Tex-Mex cuisine are also used in most chili con carne recipes.

The dish can be served with either bread, corn chips, warm tortillas, baked potatoes, or even rice

Ingredients for beef broth:

up to 500 grams of beef bones
up to 500 grams of beef brisket
1 pack of soup vegetables (2 orange carrots, 1 yellow carrot, 1 white carrot or parsnip, 1 small piece of celery root, 1 small piece of leek, some sprigs of parsley)
1 tablespoon of salt
4 garlic cloves
3 bay leaves
2-3 black cardamom pods
2 star anise
4-5 cloves

Ingredients for chili con carne:

about 750 grams of minced beef
500 grams of canned kidney beans
150-200 grams of canned sweet corns (optional)
1 red bell pepper
1 green or yellow bell pepper
5-6 tomatoes
100 grams of tomato paste (a thick paste made by cooking tomatoes for several hours to reduce the water content)
1 habanero (among the world’s hottest chillies)
1 green jalapeño (a small to medium-sized hot pepper variety)
1 tablespoon of chopped oregano leaves
3 garlic cloves
1 large onion
1-1,5 teaspoon of salt
1/2-1 teaspoon of pepper powder
1/2-1 teaspoon of cumin powder
up to 500 ml of beef broth
25-30 grams of bitter chocolate with 70% cacao
5-6 tablespoons of cooking oil
