This easy chilli con carne recipe is a great wholesome meal and quick to make.
An absolute tasty and flavoursome chilli, that is an ideal weekday meal.
Ingredients
1 large onion chopped
1 red pepper chopped
1 tsp Ginger Garlic Paste
4 tbs Extra Virgin Olive oil
1 tsp chilli powder
1 tsp paprika Powder
1 tsp Cumin Powder
¾ tsp Salt
1 tsp Basil
2 tbs Tomato Puree
1 Can Chopped Tomato
1 Can Red Kidney Beans
2 tbs Fresh Coriander
Ginger Garlic Paste
Recipe for Beef Chilli Con Carne
Add olive oil to a large pan, sautƩ onion till translucent. Add ginger, garlic paste fry for few seconds.
Slowly add all the dry spices along with tomato paste, add splash of water to avoid burning spices. Cook till it starts to release aroma.
Add mince meat, make sure to no lumps remain. Cook for few minutes till it turns brown. Add half cup water cover with lid to cook.
When water evaporates add chopped tomato can. Leave the chilli to simmer for around 20 minutes.
Once the liquid is reduced, add chopped red pepper cook for few minutes, add fresh coriander ( I used frozen coriander). Continue to cook for few more minutes. Add drained Red kidney beans place the lid on the pan let it cook till all the water is reduced.
Serve this yummy chilli with white rice, my preference is basmati rice, you can choose any long gain rice.
I prefer reduced liquid chilli which could be use in taco too with salad and creme freche.
