Ingredients for Dal Powder:
Split Chickpeas (Chanay ki dal) 1 cup
Yellow Lentil (Mung Dal) 1 cup
Red lentil (Masoor Dal) 3/4 cup
Dry ginger 2 inches

Ingredients for Dal Premix:
Oil 2 tbsp
Cumin seeds 1 tsp
Red whole chilies 4-5
Black peppercorns 8-10
Cloves 3-4
Bay leaves 2
Curry leaves 5-7
Dried fenugreek 1 tsp
Coriander (dry) 1/4 cup
Dal powder
Salt 1 ½ tbsp
Red chili powder 2 tbsp
Turmeric powder 1 tsp
Coriander powder 1 tbsp
Garam masala powder 1 tsp
Cumin powder 1 tsp
Dal mix 1 cup
Water 1 L

Directions for Dal powder Preparation:
1. In a pan roast three lentils on low flame until fragrant.
2. Cool down at room temperature and transfer to a grinder. Add dry ginger and grind into fine powder. Set aside.
Directions for Dal Premix:
3. In a pan add coriander leaves and cook until dry and crispy in texture. Set aside.
4. In a pan heat oil, add cumin seeds, red chilies, black peppercorns, cloves and cook for 1-2 minutes. Now add bay leaves, curry leaves, dry coriander, dried fenugreek and cook for a minute on low flame.
5. Add dal powder, salt, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder. Cook and mix until well combined.
6. Cool down at room temperature. Can be stored in an airtight container up to 6 months.
7. In a pot add water and dal mix. Mix well until well combined.
8. Now turn on flame and cook until desired consistency has reached.
9. Add tadka, turn off flame and cover with lid for 2-3 minutes.
10. Dish it out, garnish with coriander serve.
