
Context:
My neighbor runs a produce business and throughout the pandemic has been giving away freebies/extra produce. Through this I’ve gotten into fermenting hot sauce, which lead to me growing chilis and getting down the pepper rabbit hole. Last night he texted me saying he has 8 lbs of ghosts for me (“if I want them” – lol I nearly broke my fingers responding so quickly). So I’m about to acquire a murderous volume of capsaicin.
I’m not sure that I *want* a pure ghost hot sauce.
I’ll probably dry and or smoke a fair portion for crushing (any seasoning recipes recommended?)
Any other ideas would be very appreciated!
