Chili Oil

1/2 cup dried chili flakes
1/2 tablespoon dried coriander
2 tablespoons un-toasted sesame seeds
1/2 tablespoon salt
1/2 cup vegetable oil
1 small cinnamon stick
2 bay leaves
1 tablespoon ginger
1 tablespoon chopped green onions (about 1 stem)
1 tablespoon chopped garlic (about 2-3 cloves)
1 teaspoon Chinese black vinegar or balsamic vinegar

Directions

In a large heat proof bowl, mix chili flakes, dried ground coriander, salt and sesame. Set aside.

In a pot over medium heat, add oil and allow to get hot (60-90 seconds). Add cinnamon stick and bay leaves and allow it to shimmer and release its flavors another 60 seconds. Now add in the ginger. Once slightly fragrant (10-15 seconds) add in the garlic and green onion. Once ginger is slightly browned and all the flavors start to release turn off the heat. All in all it shouldn’t take more than 3.5-4 minutes.

Very carefully and slowly, strain the hot oil into the chili flakes mixture. Allow to cool completely (1-2 hours) before transferring into a clear jar. Store at room temp for up to 3 months or in the fridge for up to 6 months.
