RECIPE:
1 Lg Can Diced Tomatoes
1 Sm Can Tomato Paste
1 2-4 lb Chuck Roast (You can also use Steak, Ground Chuck, Ground Beef, Brisket etc.)
1 Lb Tennessee Pride Sausage (I use the Hot)
1 Lg Yellow Onion
1 Pablano Pepper
1 Green Bell Pepper
1Yellow Bell Pepper (Optional)
1 Red Bell Pepper (Optional)
1 Can Chipotle Peppers
1 Can of Beer (Optional)
1-2 Cups Water or Broth
Chili Powder To Taste
Favorite BBQ Rub
Steps to Make:
Step #1 Take your Chuck Roast and season up with your favorite BBQ Rub and get it on the smoker. I Smoked ours at 250 degrees until it’s done.
Step #2 Dice all of your vegetables up
Step #3 Brown your Sausage and Drain
Step #4 In a big bowl pour in your Diced Tomatoes with juice, Beer, Onions, Bell Peppers, Pablano Pepper, Chipotle Peppers with juice and give it a good mix.
Step #5 Add 2-3 Tbsp of your favorite Bbq Rub.
Step #6 Take your Chuck Roast off and let it rest for a few minutes then cube it up.
Step #7 Add Chili Powder (To your Taste)
Step #8 Add Sausage and Chuck Roast and give it a good mix
Step #9 Add 1 Cup Water or Broth if needed (If you add more liquid add another TBSP of Tomato Paste) you want enough liquid so it doesn’t burn because it will reduce down
Step #10 Put Chili on your smokers and let it simmer for a few hours. You don’t want it to boil just a nice simmer for 2-3 hours stirring occasionally.
Step #11 Take Chili off the smoker and give it a good stir and then sit back and enjoy thjis wonderful delicious Chili.
