Microwave Chili

On cold and rainy days it’s nice to have something warm and healthy like microwave chili!

Microwave Chili
1 can tomatoes or Rotel tomatoes with chilis
1 can black beans
1 can corn
½ cup chopped onion or 1 Tablespoon onion powder (to substitute in other recipes use 1 tablespoon onion powder for every cup of chopped onion)
2 large garlic cloves or 1 teaspoon garlic powder (to substitute in other recipes use ½ teaspoon for every large clove)
Packet chili seasoning (add slowly and taste because some packets are meant for larger pots of chili) or make your own with 2 teaspoon ground cumin, 2 teaspoon dried oregano and 1 ½ teaspoon chili powder. Optional ½ teaspoon red chili flakes if you like some spice or add some hot sauce to taste.
Add 1 tablespoon of oil to a microwave safe bowl.
Add 1 cup chopped onions and microwave for 2 min. Until the onions are soft.

Chop the garlic cloves and add to the onions along with any cooked meat you have and the seasonings.
Microwave for 2 minutes.
Add the canned black beans, corn and tomatoes with juice and a pinch of salt and mix.
Microwave for 4 minutes, take out and stir and then microwave for 5 more minutes.
Adjust with salt and pepper to taste to deepen the flavor, add 1 Tablespoon of soy sauce.
